Sourdough with Sandy: Sweet Potato Brownies

It’s been a busy fall here at Sandmark Custom Homes — between the Parade of Homes and Cancer Shucks, things have been nonstop! Normally, we’d be sharing one of our favorite sourdough recipes this month, but with the pace of October, there just wasn’t time to feed the starter but maybe once.

Luckily, our daughter came to the rescue with something quick, simple, and — most importantly — chocolatey. If you know Mark, you know chocolate is a daily requirement around here. When she mentioned these sweet potato brownies, we were admittedly skeptical. Sweet potatoes? In brownies? “Queue eye roll by Mark.

But after one bite, we were hooked. They’re fudgy and just the right balance of sweet and wholesome. The best part? They come together in 30ish minutes and even sneak in some extra nutrition and protein. Mark gave them his stamp of approval — and that’s really saying something!

Ingredients

  • 1 cup mashed sweet potato (cut into cubes and boil / steam potato first)
  • 1 cup peanut butter
  • 1 egg
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda
  • 2 scoops of vanilla protein powder
  • a sprinkle of salt
  • a handful of chocolate chips

Instructions

  1. Cut sweet potato into cubes and boil / steam until soft.
  2. Mash with a fork.
  3. Add in all of the ingredients and stir.
  4. Fold in chocolate chips at the end and sprinkle some on top.
  5. Bake in a 9 inch square baking pan at 350F for 27-30 mins.
