Sourdough with Sandy: Sourdough Hot Honey Mozzarella Bread

We love recipes like Hot Honey Mozzarella Sourdough Bread that feel special but don’t require a lot of fuss — especially ones that bring a little heat and a lot of flavor to your kitchen. This version of Hot Honey Asiago Sourdough Bread started with a favorite from Country Roads Sourdough, and was tailored by Sandy’s cousin, Heather, who lightened the chili heat and switched up the cheese a bit from the original recipe. It’s the perfect cozy bread to share this season, and we couldn’t wait to pass it along to you!

Ingredients:

  • 350 grams water
  • 50 grams sourdough starter
  • 10 grams salt
  • 5 grams of your favorite Italian seasoning blend
  • 3 grams red pepper flakes
  • 60 grams hot honey
  • 500 grams bread flour
  • 120 grams shredded Mozzarella cheese
  • 30 grams shredded parmesan cheese

Directions:

  1. Mix together water, starter, seasonings, hot honey, salt and flour until a shaggy dough is formed. Cover the dough and let sit at room temperature for 30 minutes.
  2. Do one round of stretch and folds.
  3. Another 30 minutes later, fold in cheeses during the second round of stretch and folds.
  4. Do another 2 rounds of stretch and folds with 30 minutes between rounds.
  5. Let the dough sit covered at room temperature for a total of 10-12 hours, or until the dough has risen about 75%.
  6. Shape the dough into a taut round ball and place th dough upside down in a floured bowl. Cover with a damp tea towel and place in the fridge overnight.
  7. Preheat the oven with the dutch oven in it to 450 F.
  8. Score the dough and then place the dough into the oven at 450 F for 30 minutes covered followed by 15 minutes uncovered.
