If you’ve got sourdough discard piling up on the counter and don’t feel like making another loaf, this one is worth trying. These homemade Sourdough Discard Cheez-Its have become a favorite around here—crispy, cheesy, and almost impossible to stop snacking on once they come out of the oven. Mark & Jett approved!! They’re simple to make, great for sharing, and a fun way to use up extra discard (if your family doesn’t eat them all first!)
Ingredients:
- 2 c sourdough discard, room temperature
- 2 c shredded cheddar cheese
- 4 tbsp melted butter
- Salt, pepper & garlic powder to taste
Directions:
- Preheat the oven to 350 degrees.
- Mix discard, cheese, and butter in a food processor and pulse.
- Spread on parchment paper on a baking sheet. Ours took 2 sheets.
- The thinner, the crispier the cheese it will be. We liked a mix of really thin (paper-like) and a bit thicker in other spots.
- Bake for 10 minutes at 350 degrees.
- Cut into squares and bake for another 20-25 minutes, or until your desired texture.
- Sprinkle it with salt, pepper, and garlic powder.

If your crew doesn’t eat the whole pan once they come out of the oven, store in an airtight container.
