This month’s newsletter has leaned toward healthy living, and we fully intended to share a wholesome recipe to match. But then Christmas morning happened at Rocky, Amanda, and Jett’s house, and these sourdough cinnamon buns stole the show. Sometimes balance looks like nourishing your body — and sometimes it looks like sharing something homemade, comforting, and too good to keep to ourselves. This one definitely falls into the second category.
Ingredients:
For the dough:
- 1c whole milk (warmed to 100-110 degrees F)
- ¼ c sugar
- 2 ¼ tsp active dry yeast
- 1 egg
- ½ c sourdough discard
- 1 tsp salt
- 4 tbsp butter (softened)
- 3 ½ c all-purpose flour
For the filling:
- 4 tbsp butter (softened, room temp)
- ½ c brown sugar
- 2 tbsp cinnamon
For the frosting:
- 2 oz cream cheese
- 2 oz butter
- 1 c powdered sugar
- 2 tsp vanilla extract
- 4 tbsp milk
Directions:
- Butter a 9×13 baking dish.
- Pour warmed milk into the bowl of a stand mixer.
- Add sugar and yeast. Whisk and let sit for 5 minutes until foamy.
- Whisk in sourdough discard and eggs.
- Add flour, butter, and salt.
- Using a dough hook, mix on low/medium speed until it begins to come together. Increase speed and mix until you have a soft, not overly sticky dough.
- Remove hook and cover bowl with a damp towel to rise for 1 hour.
- Punch down dough and dump onto a lightly floured surface. Roll dough into a large rectangle.
- Spread 4 tbsp of soft butter evenly over dough, all the way to the edges.
- Cover with brown sugar and cinnamon mixture, spreading evenly with your hands.
- Beginning on the 12” side, roll dough tightly away from you and pinch along the seam.
- Cut the log in half, and each half into 6 pieces.
- Place in a dish and cover with a damp towel to rise for 30-35 minutes.
- Refrigerate overnight.
- Preheat the oven to 350 degrees F and bake for 25 minutes.
- While baking, make your frosting.
- Cream butter and cream cheese together.
- Add powdered sugar and vanilla and mix.
- Slowly add milk until desired consistency is reached.
- Smother rolls once they come out of the oven. Enjoy!!
