Ingredients:
- 300 g warm water
- 150 g active sourdough starter (fed and bubbly)
- 10 g salt
- 450 g bread flour
- 1 heaping handful chocolate chips
- Cocoa powder (for coating)
Directions:
- In a large bowl, combine the warm water and sourdough starter. Stir until the starter is mostly dissolved. Add the bread flour and salt. Mix until a shaggy dough forms and no dry flour remains. The dough will be slightly sticky — that’s normal.
- Cover the bowl with a damp towel or plastic wrap and let the dough rise at room temperature for about 8 hours.
- Turn the dough out onto a lightly floured surface. Gently flatten it into a rough rectangle.
- Sprinkle the chocolate chips evenly over the surface, then fold the dough over itself several times to distribute them. Shape the dough into a smooth ball by pulling the edges underneath to create surface tension.
- Lightly dust the outside of the dough ball with cocoa powder, rolling it gently to coat.
- Place a piece of parchment paper inside your Dutch oven and transfer the dough onto the parchment. Cover and let rise for 1 hour at room temperature.
- Preheat your oven to 475°F. Bake the bread with the lid on for 20 minutes.
Remove the lid and bake for an additional 22–25 minutes, or until the crust is deep brown and crisp. - For best results, the internal temperature should reach about 205–210°F.
